I have found this recipe in my books again, I think the recipe is from Sandra and/or Barbara. I have pimped it a little with some icing (mascarpone, sugar and lemon juice) (see on picture).
So here it comes, what you need:
6 eggs (white and yellow separated)
300 gr of carrots (gerieben, thanks to my Bamix this was done within a minute)
300 gr of almonds (shredded as well, I always leave it a little chunky, because I like when the cake is like that also)
1 lemon (skin and juice)
150 g sugar, 60 gr flour
1 spoon of baking powder.
Preheat the oven to 180 ° C. I would also advice to prepare everything beforehand (even to beat the eggwhites to snow already, so you just need to add them).
First you mix the yellow eggs with the sugar until they become frothy, then you add the almonds, the carrots and the lemon.
When these are mixed you put the flour and baking powder and snow eggwhites and fold the egg white snow into the mixture until it is quite puffy.
Fill the dough into the form with the baking paper and leave it in the oven for 50-60 minutes (still 180°C). I took it out a little earlier to avoid the cake to become too dry.
For the icing you can mix 250 g mascarpone for 2 minutes and then add some sugar and lemon juice (to your taste) and out it on the cooled down cake.
The cake is almost better if it cools overnight.
