Tarte aux courgettes chèvre et ricotta...

Last week, I have tried this "tarte" and have to say that it was really good! I just changed the ingredients from Feta to goat cheese, because I wanted to get rid of some goat cheese...

1 puff pastry
2 zucchini
200 g ricotta
2 eggs
fresh mint leaves
olive oil
salt and pepper

Cut the zucchinis in fine slices and make the cook in a pan with olive oil, add salt and pepper until they become slightly brown (roughly 5 minutes)
Preheat oven to 180° C and put the dough into the 'tart' form. Make small holes in the dough and keep in the fridge until ready.
Mix the eggs, the ricotta, the minced mint leaves and the goat cheese in cubes. Add salt and pepper. 8I added some honey because I like to mix honey with goat cheese a lot)

Put this mixture into the tart form and decorate with the zucchini slices. Put in the oven for 35 to 40 min.

Simply green salad is nice to have aside from the 'tart'.

  1. Looks really tasty, but I think I'll have to swap out the courgettes for something tastier ;-). Tomatoes?
